This is a quick easy and delish dish that you can make for anytime of day. I happened to make it for my lunch today and wanted to share it with you.
What you will need...
- Whole Wheat sandwich thins
- Pesto with Basil Spread
- Fresh Tomato's
- Slice of Mozzarella Cheese
- Fresh Spinach
- Garlic Salt (optional)
- Butter ( I used - Can't Believe it's not Butter )
Let's start building the sandwich... mmmmm!!!
Start by spreading a thin layer of the Pesto with Basil spread on both sides of your sandwich thins. Add some spinach to the bottom bread. I just grabbed a small handful. Add about 3 slices of tomato. Next is the mozzarella cheese and lastly sprinkle a very small amount of garlic salt on top of the cheese. Top with the other slice of pesto covered bread.
If you have a panini press you can use that to heat this up. It's quick and heats the whole sandwich evenly. Otherwise you can heat this up in the oven. If your heating in the oven you do not need the butter. Since I used my panini press I just spread a very small amount to the outer part of the sandwich to help in the grilling.

Sandwich Thins - 100 cal for two slices
Pesto with Basil Spread - 40 cal
Mozzarella - 90 cal for 1 slice
Spinach - 25 cal for about 1/2 cup
Tomato - 15 cal for 3 slices from a small tomato
Butter (can't believe it's not butter) - 35 cal in 1/2 tbsp
Garlic Salt - 0 cal
Total for this sandwich - 305 calories
Add some fresh grapes and carrots and you have a great lunch!

ReplyDeleteYUM! I've enjoyed a similar (cold) version of this sandwich for the past 15 years! My version uses fresh Bazil leaves instead of Spinach and is sprinkled with Italian Seasoning instead of Garlic Salt. I put the pesto on one side of the bread and a bit of olive oil and balsamic vinegar on the other side of the bread and just eat it cold. If I can afford the calories, I have it on a french baguette. SO GOOD!
